Hey Reader,
Picture this: a steak and a whole fish, sitting in the exact same water bath, cooking for the exact same hour.
Your gut reaction is probably that one of them has to lose. Mine used to be too—until I actually tried it and found out that's not how it works. Both come out exactly right, at the same time, in the same pot of water. No juggling two cook times, no "wait for the fish, then start the steak."
I call this group cooking, and once you see the logic behind it—it's hard to go back to cooking one protein at a time.
