Crispy Tofu & Broccoli Stir Fry and Chickpea Salad with Kale

SIMPLE COOKING WITH STREET-SMART TIPS & EASY RECIPES

Mostly sous vide & low-carb.

Hey Reader,

How has your new year been so far? Between the whirlwind of Christmas and New Year’s, and with my son's birthday, plus Lunar New Year just around the corner in February, I’ve been craving a little reset—something fresh, satisfying, but totally doable on a busy weeknight.

If you’re feeling the same, I’ve got you covered. This month, I’m leaning into two of my favorite plant-powered recipes that are light but deeply satisfying—no deprivation, just deliciousness.

Crispy Tofu & Broccoli Stir Fry

This is my go-to 20-minute reset meal. It’s packed with flavor from a gingery, savory sauce, and it’s designed to make you feel good from the inside out. Perfect for when you want something quick, tasty, and nourishing.

Meal Prep Tip: Cook a big batch. Serve it as is over rice or as a side dish to pair with a Chinese-style protein for lunch the next day.

Crispy Chickpea Salad with Kale

If you’re looking for a meal that’s both hearty and refreshing, this salad is it. Think crispy harissa-spiced chickpeas, tender roasted sweet potatoes, creamy avocado, and a dreamy tahini dressing.

Meal Prep Tip: Roast the harissa-spiced chickpeas ahead of time. It can be stored in an airtight container for up to three days. I sous vide my sweet potatoes often. So I always have that ready to go as part of my meal prep routine. You can certainly roast them in the oven beforehand. Then, this warm and satisfying salad bowl comes together in no time.

Both recipes are plant-based, gluten-free, dairy-free, and full of the kind of food that makes you feel energized and vibrant—without spending hours in the kitchen.

I hope you enjoy these recipes. Have a fabulous weekend!

Cheers,

P.S. If you make either recipe (or both), I’d love to hear how it goes! Reply to this email or leave a comment on the blog with a rating. It'll help more street-smart chefs like you discover the recipes and bring more culinary creations and health into the world.
