Crispy Chickpea Salad with Kale
If you’re looking for a meal that’s both hearty and refreshing, this salad is it. Think crispy harissa-spiced chickpeas, tender roasted sweet potatoes, creamy avocado, and a dreamy tahini dressing.

Meal Prep Tip: Roast the harissa-spiced chickpeas ahead of time. It can be stored in an airtight container for up to three days. I sous vide my sweet potatoes often. So I always have that ready to go as part of my meal prep routine. You can certainly roast them in the oven beforehand. Then, this warm and satisfying salad bowl comes together in no time.
